Ingredients

• 2 cups pineapple chunks
• 1 red bell pepper, cut into chunks
• 1 orange bell pepper, cut into chunks
• 1 yellow bell pepper, cut into chunks
• 1 zucchini, thick half‑moons
• 1 bunch of broccoli, cut into bite-sized pieces
• 1 red onion, cut into wedges
• 2 Tbsp olive oil
• 1 Tbsp balsamic vinegar (or lime juice)
• 1 tsp honey or maple syrup
• 1/2 tsp smoked paprika
• Pinch of salt and black pepper
• Skewers (soaked if wooden)

Instructions

1. Preheat grill to medium‑high. Soak wooden skewers 20 minutes if needed.
2. Whisk olive oil, balsamic, honey, paprika, salt, and pepper.
3. Thread pineapple and veggies onto skewers, alternating colors or creating an ombre effect.
4. Brush with marinade and grill 8–10 minutes, turning, until lightly charred and tender.
5. Serve warm as a side or over rice/quinoa.
