Ingredients

• 1 lb (450 g) chicken breast or thighs, sliced
• 1 Tbsp oil
• 2 bell peppers, sliced
• 1/2 onion, sliced
• 1 1/2 cups pineapple chunks (fresh or canned, drained)
• 2 cloves garlic, minced
• 1 tsp grated ginger (optional)
• 3 Tbsp soy sauce
• 1 Tbsp rice vinegar or lime juice
• 1 Tbsp honey or brown sugar
• 1 tsp cornstarch + 2 Tbsp water (slurry, optional for thicker sauce)
• Optional toppings: sliced green onion, sesame seeds

Instructions

1. Heat oil in a large skillet over medium‑high. Add chicken and cook 4–5 minutes until browned.
2. Add peppers and onion; stir‑fry 3–4 minutes until crisp‑tender.
3. Add garlic, ginger, and pineapple; cook 1–2 minutes.
4. Stir in soy sauce, vinegar/lime, and honey. Simmer 1 minute.
5. For a thicker glaze, add cornstarch slurry and simmer 30–60 seconds. Top and serve over rice.
