Ingredients

• 2 cups baby spinach
• 1 crisp apple, thinly sliced
• 1 medium carrot, shredded
• 1 celery stalk, thinly sliced
• 1/4 cup toasted walnuts or pecans
• 2 Tbsp crumbled feta (optional)
• 2 Tbsp dried cranberries (optional)
• 2 Tbsp olive oil
• 1 Tbsp apple cider vinegar
• 1 tsp Dijon mustard
• 1–2 tsp maple syrup or honey
• Pinch of salt and black pepper

Instructions

1. Whisk olive oil, vinegar, Dijon, maple syrup, salt, and pepper in a small bowl.
2. Add spinach, apple, carrot, and celery to a large bowl.
3. Toss with dressing until lightly coated.
4. Top with toasted nuts (and feta/cranberries if using). Serve immediately.
